A simple way to make a nice bed of rice for your sushi, without getting your hands messy.
Ingredients
- Sushi rice.
- Mirin
- Rice vinegar
- sugar

- Plastic wrap

- Cook 2 cups of good quality sushi rice, the cheap stuff doesn’t work well. Rice cooking instructions are on the bag.
- Place cooked rice into a large mixing bowl.
- Add 3 tbsp Mirin. Mirin is a seasoned rice wine. You can get it at most stores these days.
- Add 2 tbsp rice vinegar
- Sprinkle 1 tsp sugar over the rice.
- Gently fold the mirin, vinegar, and sugar into the rice. Folding is just gently turning the rise over until it’s all mixed up.
- Next you need a sushi rolling mat, and the plastic wrap. Mats are only a few bucks.
- Cover the mat with the plastic wrap. make sure you have a few inches extra on the sides.
- using a wooden spoon. spread the rice evenly over about the first half of the mat. the more rice you put down, the thicker your rice bed will be. I usually make mine about a 3/4 inch thick.
- Roll the rice just like you would roll a sushi roll. Gently compress the roll as you go. I like to flatten the rice a bit. The fish stays on better.
- Unwrap the rice. and cut it into one and a half to two inch long pieces. Slap some fish on the rice, and you are good to go.
